The role of pasta in nutrition |

What is
pasta made from?
Pasta is made from the cereal called durum wheat. Unlike soft wheat, it is used
for making pasta in the form of semolina and not flour. |

| Durum wheat (and
thus pasta) is comprised essentially of complex carbohydrates,
which are the source of energy for nerve and muscle cells. |

Why should
we eat complex carbohydrates at every meal?
Carbohydrates should account for 50% of our daily calorie intake:
- most (80%) in the form of complex carbohydrates
- rich in starch:cereals or starchy foods
- a smaller part (20%) in the form of simple carbohydrates
- sugar: table sugar, fruit, honey |

| In order to achieve
this goal, the PNNS (National Health Nutrition Plan) recommends
eating essentially complex starchy carbohydrates at each meal. |

What is the nutritional value
of pasta?
Pasta is naturally rich in complex carbohydrates:
- makes diners feel full and reduces
the urge to snack
- feeds the body according to needs
- the associated energy intake is gradually
supplied to the body over time |

Naturally poor in fat
For a balanced meal, you should eat pasta with vegetables
with a drizzle of olive oil, and limit your intake of
fatty foods such as cheese and cream. |
